Banana Chocolate Chip Softie (cake-like cookie)

Another way not to waste over-riped bananas. Not an ordinary cookie, not a cake, but a cake-like cookie. Mmm... ...又一個處理過熟香蕉的好方法。不是一般的曲奇,不是蛋糕。。。。

The moment i had the first bite, straightaway fell in LOVE with it: the bananay-cake-like cookie. 第一口就愛上它,濃香蕉味,像蛋糕的曲奇餅。

It really put a big smile on my face while seeing my babies (hubby and 2 bb) enjoying the softies and keep nodding their head with a face telling me how satisfied they were.
最開心不過的,就是看到我的3寶,一直吃一直點頭贊好吃

A must-try for banana cake lovers 愛香蕉蛋糕的,一定會愛上這 softie ^______^


Ingredients:
~ 3 small over-riped bananas (may use 1 big banana) 3 小香蕉 或 1 大香蕉
~ 1 1/4 cup flour 麵粉
~ 1/3 cup butter 牛油
~ 1/3 cup sugar 糖
~ 1/3 cup brown sugar 紅糖
~ 1 egg 雞蛋
~ 1 tsp baking powder 發粉
~ 1.5 tsp salt 鹽
~ 1 tsp vanilla essence 香草精
~ 1/2 cup chocolate chips, i mixed 3 types of chocolate chips 巧克力粒,我用3种不同巧克力粒


Method:
1) preheat oven at 190° 預熱烘爐
2) beat sugar and butter till fluffy 把糖和牛油打至鬆散
3) mix in banana, egg, vanilla essence  加入香蕉,雞蛋,香草精,攪拌好
4) mux in (flour + baking powder + salt, all 3 premixed together) 加入面粉,發粉,鹽 (這3种材料預先混合好)
5) stir in chocolate chips 把巧克力粒攪拌進去
6) use tbsp to scoop the batter, drop it onto baking tray (with parchment paper) 用湯匙把麵糰舀成粒狀,放在烘培紙上
7) bake 9 minutes or till edges show golden brown 烘9分鐘或直到邊沿呈金黃色

Butter + sugar 牛油 + 糖 (白,紅)

Mixed in banana + egg + vanilla 混合香蕉,雞蛋,香草精

Mix in (premixed flour + baking powder + salt) 參入預先混合好的粉,發粉,鹽

Scoop over to baking tray 舀粒狀

Bake bake bake

Love the smell 扑鼻的香味

Chocolate Icecream Banana Cake

08.08.08 was a very special day for me + hubby, that was the day we started our relationship, and therefore, 0808 is our "paktor anniversary" ^_^

I have made this cake to celebrate this very special day:

Look easy, but not really (for me), maybe due to i was slow and very particular to small small thing, so i end up standing in the kitchen with stress for long, hahaha...
Ingredients (cake):
(A) 7 egg yolks, 100ml corn oil, 100g fresh milk, 150g all purpose flour
(B) 7 egg whites, 120g caster sugar

Method (cake):
1) mix well (A)
2) beat (B) till it reaches hard peak
3) fold (B) gently into (A) in 3 batches
4) pour batter into a 8" square mould (if you wanto make a round one, then use a 8" round mould)
5)  bake in a preheated oven at 170°, for 45minutes

**Prepare some banana slices too**
Ingredients (icecream):
❀ 200g icecream mix, chocolate flavor 
❀ 560g full cream milk

Method (icecream):
❀ mix both ingredients and beat in high speed for 5-6 minutes, or until it reaches 1.5 or double in size. 


Making the Chocolate Icecream Banana Cake:

1) cut the cake smaller. In fact if u have bigger square tin, then u can just put the cake in the bigger tin. Not too big, 1-2 inch bigger just nice
2) now, cut the cake horizontally into half, and put one slice into the center of the bigger tin
3) pour the icecream to cover all over the slice of cake. 
4) lay some banana slices on the cake layer (refer picture at the bottom) 
5) repeat step 3
6) put the other slice of cake, and repeat step 3
7) now pour icecream to the side/fill up the gap.
8) freeze the cake for 1/2hour before decoration
9) enjoy the cake after frozen overnight ❣

Banana Chiffon Cupcake

This is one of my favorite: soft and fluffy banana chiffon cupcake.

A healthy treat for my lovely family: no butter, use virgin coconut oil, and not using white sugar.

Ingredients:
✴ 4 egg yolks
✴ 1 tbsp brown sugar
✴ 50g virgin coconut oil
✴ 2 very riped banana mash+ 3 tbsp fresh milk
✴ 80g super fined flour

✴ 4 egg whites
✴ 2 tbsp brown sugar
-------------------------

Method:
1) preheat oven at 160°
2) whisk egg yolks and brown sugar till thick.
3) add in virgin coconut oil and banana mix (mix banana mash and milk together before adding into the batter)
4) add in flour, mix well.
3) in another bowl, beat egg whites till foamy, add in brown sugar gradually and continue beating till it reaches hard peak.
5) fold in egg whites to yolk mixture with a spatula, in 3 batches, fold gently.
6) pour the batter into cupcake liners.
7) tap cupcakes gently on table top to release trapped air bubbles.
8) bake for 20minutes

Banana and Chocolate Rice Muffin


Got this recipe from a very good friend of mine who stay in US, a very good cook and baker too.

My hubby and daughter loves it so much ;)
And i already baked about 3times until now, also baked for SSL 修成林 charity sale, which i have contributed around 35-37 muffins. Not much, but i took me hours of that as im having a small oven only, and i can only bake very late night after babies sleep :) 

Ingredients 
125g butter, room temperature
80g caster sugar
2 large eggs
1/2tsp vanilla extract
100g self-rising flour
80g mashed banana
30g chocolate rice


Method

1. Preheat the oven to 180C.
2. Put the butter and sugar in a mixing bowl, and beat together until light and fluffy.
3. Add egg one at a time, combine well.
4. Add in the flour and mashed banana, fold till well combine.
5. Add in chocolate rice, mix well.
6. Spoon the mixture into the paper cases.Sprinkle chocolate rice on top.
7. Bake the cupcakes in the oven for 20-25minutes, or until risen and firm to the touch.
8. Transfer to a wire rack and let cool.

2 eggs + 1 banana = Simple Pancake

2eggs + 1 banana = Pancakes
Yea, that simple.
No oil, no flour, no baking powder, no butter needed.
1)  Just mash the banana with spoon or fork.
2)  add in 2eggs, mix well.
3)  Heat up a non stick pan,  with medium fire
4) scoop batter into the non stick pan. U can control how big the pancake u want.
5) around 1minute or more,  you should see the outer ring of the pancake is cooked, and flip over the pancake, and cook for another 1minute
The pancakes are good enough to eat on its own, but best to serve with fruit jam, butter, or peanut butter ^_^
