Corn Kuih 玉蜀黍糕

Hubby saw me preparing something in kitchen, thought im going to bake him cake for supper, heres our conversation.

Hubby: "wifey wats baking?" (with happy n curious tone)
Me: "corn kuih"
Hubby: "corn kuih??? i dont eat one wo..."
Me: "i know r, but i like ma"
Hubby: "huh~~~~" (disappointment)

Ingredients
- a can of creamy corn 一罐玉蜀黍糊
- 1000ml water 水
- 150g custard powder 蛋黃粉
- 200g coconut milk 椰奶
- 100g sugar 糖

Method:
1) put everything together in a cooking pot 把全部材料混合一起

2) heat/boil it over small fire on gas stove 用小火煮

3) stir slowly, constantly, until the mixture gets thicken 慢慢攪拌,直到混合物變濃

4) off the heat 熄火

5) pour into any moulds/plate, after that let it cool for at least 30minutes 倒進模型,讓它冷卻最少30分鐘

6) chill in fridge few hours/overnight 放進冰箱3-4小時/隔夜

This recipe gives the right texture of corn kuih that i love most☞SOFT

Apam Balik

Again, this recipe was shared from my good friend, Ernice.

I have made the batter one day earlier.
Hubby has offered help by cooking and chopping up the peanut. In the end, he himself tried to cook a few pieces apam balik too, haha ^_^

Coconut Corn Kuih 椰子粟米糕

Love this kuih and coincidentally my good friend Ernice has the recipe, big satisfaction to have made this but since hubby not so fancy about coconut related kuih/food, so i was the one who finished most of it, haha

Ingredients:
Corn flour 1/2 cup
Creamy corn in a can 1/2 cup
Coconut milk 1/3 cup
Fresh milk 1/4 cup
Sugar 3/4 cup
Water 2 cups

Method:
- Stir corn flour into 1/2 cup of water, set aside
- use remaining 1.5 cup water to cook together with sugar over low heat. Once sugar dissolved, add in corn flour, keep on stirring
- add in creamy corn, fresh milk, and coconut milk, keep stirring.
- when the mixture gets thicken, off the heat.
- pour the mixture into moulds, and refrigerate for few hours before serve
