Butter Choc Muffin (mini chocolate lava cake)

這是自己誤打誤撞弄出來的食譜。。因為要弄大的chocolate lava cake, 結果lava 太lava (看圖), 在沒有mood 弄下去之時,就決定嘗試弄小小muffin, 但我的muffin tray 小,所以想到裏面的巧克力'岩漿'不能多。

結果哩?外表沒什麼,但裏面有少許的chocolate lava, 是剛好我要的texture哦。。

最後吃了2.5粒,肥死。。。。 內疚死!!

Recipe:
✾ 120g cooking chocolate
✾ 65g unsalted butter
❀ 2 eggs
❀ 2tbsp sugar
❀ 1/2tsp vanilla essence
30gram super fine flour

Method:
1) double boil to melt butter + chocolate
2) beat all ❀ till fluffy
3) add in melted ✾
4) add in sifted flour
Preheat oven at 225°c
5) grease muffin tray
6) dust with cocoa powder
7) scoop the mixture into muffin tray holes
8) bake 3 minutes, bring down heat to 215°c, bake for another 2 minutes

Every oven is different, you may need to try and try to get the texture you like (∩_∩)

STEP-BY-STEP METHOD:

Cooking chocolate 

Unsalted butter 

Butter + chocolate 

Double boiling

The melted choc + butter

Eggs + sugar + vanilla 


Egg mixture, beat by mixer

Combine both mixture 

Sift in flour

Beat for around 30seconds

Grease and dust cocoa powder

Japanese Yakigashi 日式燒果子



❝ Super cute❣ 好可愛哦 ❣ ❞

是的,我自己也覺得cute. 只是几個簡單的笑臉/哭臉/熊貓臉,也能逗人喜愛,讓人開心。

材料簡單,做法簡單,連裝飾也省下,只需要溶化巧克力畫几畫,that's it :)

為什麼我沒有弄bird/chicken, rabbit, cat? 唉,不是沒有,而是捏好的形,在烘爐裡發到全部圓圓的,當然我的確有弄些圓形的。大概是我捏的不夠好,還是發粉太發了?haha

Recipe:
350g sweetened creamer
350g super fine flour
2 egg yolk
8g baking soda
Some redbean paste


Sift together baking powder + flour


Mix together egg yolk + sweetened milk


Milk+yolk


Yolk mixture + flour mixture


After mixed + simple knead


Cover with cling film, chill for 30minutes 


Wrap redbean as filling 


Preheat oven at 165°, bake for 18-20minutes 






Instead of using coloring, i used melted chocolate to draw the cute faces ^_____^
and some are just simply drizzled with melted chocolate
沒有色素,就用巧克力,溶化了再用牙籤畫上可愛的臉孔囉。。。其他的只是隨意的用沾上巧克力的叉子在上面畫几畫 ^______^

Chocolate Icecream Banana Cake

08.08.08 was a very special day for me + hubby, that was the day we started our relationship, and therefore, 0808 is our "paktor anniversary" ^_^

I have made this cake to celebrate this very special day:
❤Chocolate Icecream Banana Cake❤

Look easy, but not really (for me), maybe due to i was slow and very particular to small small thing, so i end up standing in the kitchen with stress for long, hahaha...
Ingredients (cake):
(A) 7 egg yolks, 100ml corn oil, 100g fresh milk, 150g all purpose flour
(B) 7 egg whites, 120g caster sugar

Method (cake):
1) mix well (A)
2) beat (B) till it reaches hard peak
3) fold (B) gently into (A) in 3 batches
4) pour batter into a 8" square mould (if you wanto make a round one, then use a 8" round mould)
5)  bake in a preheated oven at 170°, for 45minutes

**Prepare some banana slices too**
Ingredients (icecream):
❀ 200g icecream mix, chocolate flavor 
❀ 560g full cream milk

Method (icecream):
❀ mix both ingredients and beat in high speed for 5-6 minutes, or until it reaches 1.5 or double in size. 


Making the Chocolate Icecream Banana Cake:

1) cut the cake smaller. In fact if u have bigger square tin, then u can just put the cake in the bigger tin. Not too big, 1-2 inch bigger just nice
2) now, cut the cake horizontally into half, and put one slice into the center of the bigger tin
3) pour the icecream to cover all over the slice of cake. 
4) lay some banana slices on the cake layer (refer picture at the bottom) 
5) repeat step 3
6) put the other slice of cake, and repeat step 3
7) now pour icecream to the side/fill up the gap.
8) freeze the cake for 1/2hour before decoration
9) enjoy the cake after frozen overnight ❣

Chocolate Horlicks Doggie Cookies

Specially made for my cute bb Megan ^_^

Ingredients:
180g butter, soften at room temperature
80g Horlicks (chocolate flavour)
200g cake flour
25g corn flour
25g soymilk powder
100g chocolate chips
some chocolate rice
some Koko Krunch


Method:
  1. Pre-heat oven at 140deg C. Line baking tray with baking paper, set aside. 
  2. Sieve cakr flour, corn flour and soymilk powder.
  3. Cream butter and chocolate Horlicks until well mixed. 
  4. Put in cake flour, cornflour and milk powder and use hand to mix well to form dough. 
  5. Divide dough into 10g each. Put three chocolate chips into each piece of dough and roll into a ball. You may press to flatten the face abit, and make some with round faces, or any shape you want. 
  6. Insert two pieces of Koko Krunch to form the 'ears', chocolate rice for the 'eyes', and a chocolate chip in the centre for the 'nose'.
  7. Bake at 140 deg C for about 25 minutes, and bake another 5 to 10 minutes more at 150°
  8. Leave to cool on wire rack before storing in an airtight container.
Tips:
You may want to make different doggie faces with different expressions just like mine:
- happy
- sad
- sleeping
- fierce
- "flying" ears

Banana and Chocolate Rice Muffin


Got this recipe from a very good friend of mine who stay in US, a very good cook and baker too.

My hubby and daughter loves it so much ;)
And i already baked about 3times until now, also baked for SSL 修成林 charity sale, which i have contributed around 35-37 muffins. Not much, but i took me hours of that as im having a small oven only, and i can only bake very late night after babies sleep :) 

Ingredients 
125g butter, room temperature
80g caster sugar
2 large eggs
1/2tsp vanilla extract
100g self-rising flour
80g mashed banana
30g chocolate rice


Method

1. Preheat the oven to 180C.
2. Put the butter and sugar in a mixing bowl, and beat together until light and fluffy.
3. Add egg one at a time, combine well.
4. Add in the flour and mashed banana, fold till well combine.
5. Add in chocolate rice, mix well.
6. Spoon the mixture into the paper cases.Sprinkle chocolate rice on top.
7. Bake the cupcakes in the oven for 20-25minutes, or until risen and firm to the touch.
8. Transfer to a wire rack and let cool.
