花籃早餐 Breakfast Basket

週末囉。。。 來,看看最后那張圖,是我創的花籃早餐,美嗎?會讓妳們唾延嗎? Oh weekend, oh breakfast❣ look at the last picture, i have made this Breakfast Basket out of my own creativity, lovely?

做法很簡單,可以參考以下圖片。Method is simple, you may refer below pic, which shows you step-by-step "how-to".

注:在第5步驟,灑上芝士后,放幾茶匙蛋白,或多點也無所謂 (",)

This was the porcupine bread i made before i send it in to oven. If to steam it, i believe it will still look as white and cute like this. 這是烘的麵包,但如果是蒸的,就會是一只白白的porcupine/hedgehog 囉 (",)

怎樣弄出porcupine/hedgehog的刺?是用剪刀小片小片的剪,不難,蠻快的,而且我沒有小剪刀,用的是大剪刀,嘻嘻 (∩_∩)

Baked Cheese Bun & Redbean Bun (with muffin tray)

I used to steam mantau/flower bun, but this time, i had tried oven-baked bun with original recipe titled: 40minute Cheese Bun.

Yes, 40minutes recipe but i have used almost an hour, as i was slow in preparing the ingredients, slow in stuffing my buns, slow in doing the egg wash, etc.

I followed the method to use a muffin tray. The blogger never show how her bread look like after taken out from the tray, but i guess that is how a muffin-like bread is made, haha......

I have been hesitating to do bread as most of the recipe needed long waiting proofing time + kneading time (as i have no bread maker), but with this 40minute recipe, definitely something i will do again, and again (",) 

The extra dough allowed me to have made this lil cutie, its palm size, very cute right ^____^

Ingredients:
3.5cup bread flour (i use pau flour) 3.5杯包粉
280ml water 280ml 水
2tbsp instant yeast 2湯匙酵母
1/4cup sugar 1/4 杯糖
85ml oil (i used virgin coconut oil) 85ml油,我用virgin coconut oil
1.5tsp salt 1.5小匙鹽
1 egg 雞蛋
Filling: cheddar cheese and redbean paste 芝士切成絲,紅豆泥

Method:
1) mix water, sugar, oil, and yeast together, and let the mixture rest for 15minutes 混合水,糖,油,酵母。靜置15分鐘
2) after 15minutes, add in flour, salt, and egg 加入粉,鹽,雞蛋
3) i have no bread maker, so i hand knead for around 10-15minutes 我沒有麵包机,用手搓揉10-15分鐘
4) divide the dough into 24 round balls 分24份稍為搓圓
5) use a rolling pin roll out the divided balls 把搓圓的面團杆開
6) put in grated cheese / redbean, seal the hole by pinching them nicely 放些芝士絲或紅豆泥
7) put all in a muffin tray 放入muffin 盤
8) cover with a damp cloth for 10minutes, preheat oven at 200°c 用濕布蓋好10分鐘,預熱烘爐200°c
9) after 10minutes, brush bun's top with egg, sprinkle some cheese on top for cheese buns, and sprinkle some black sesame on redbean buns 過了10分鐘,面包刷上雞蛋液,芝士麵包灑上芝士絲,紅豆面包灑上黑芝麻粒
10) bake for 12minutes or until the top shows golden brown 烘12分鐘或至面包頂呈金黃色

Hubby love these bread so much and ate 4 in a row, giving me a heavenly-satisfied look after each bite of the buns ^______^

The cheese bun 芝士麵包


The redbean bun 紅豆面包

藍莓軟糕 blueberry soft kuih

自己從來都不喜歡吃的,但老公喜歡,而且每天都看着用不完的糕粉,有點"sien", 所以就隨便的弄了這"藍莓軟糕"囉。。。

很容易啦,如果放了紫色的色素應該會更美囉 (",) 我有啊,也plan了要放,但忘了 ~______~

Ingredients:
150g 糕粉 kou-fun (can find in baking ingredients shop) refer pic
130g 糖 sugar
20g 食油 cooking oil
170g 水 water
60g 冷水 cold water
藍莓醬 blueberry paste

Method:
1) 把水+糖煮溶,待涼 cook water + sugar till sugar dissolved, put aside to cool off
2) 加入食油 add in cooking oil
3) 加入糕粉 (分几次) add in kou-fun, in few batches
4) 加入冷水 add in cold water
5) 在桌面灑上糕粉,用cling paper 蓋好軟糕,用roller pin 壓平 sprinkle some ko-fun on table top, use cling paper to cover the soft kuih, roll it out by using a rolling pin

6) 涂上藍莓醬,卷好,切片,冷藏 spread blueberry paste, roll up, cut into slices, keep in fridge

老公讚好吃喔 hubby loves it woh, haha ^_^

Mozzarella Stick 乳酪棒


Crispy, gooey, delicious mozzarella cheese stick. ❀✿Love it✿❀

Mozzarella sticks are great snack, which you may have tried before at any restaurants or party catering. It is so nice to eat it on its own, or to dip it with any sauce or condiment you like.

Preparation is easy, to be exact, is super easy. I like to cut the cheese stick from a block, as i can control the thickness i like, and i have planned to try out next time: baked mozzarella balls, sounds great?  (",) 

One thing to take note: do not use too high heat while frying. By using too high heat, the skin cooked faster than the cheese inside to be melted/warmed.

2eggs (add 1tbsp water) , some flour, bread crumbs (with all spice seasoning)  2雞蛋 (加1湯匙水),麵粉,麵包糠 (加入調味料) 

Mozzarella block 乳酪塊

Cut into pieces according to the thickness you like. If you follow this thickness, one block can cut into 8 sticks. 如果跟着這厚度,一塊可以切出8條


Dredge the cheese stick in the flour until its fully coated 把乳酪條在麵粉裡打撈


Place it in the egg water mixture 把它放進雞液裡撈

Place it into the bread crumbs, roll it all over 放進麵包糠裡,确保面包糠完全沾上

Dip the cheese stick into the egg bowl again 再浸入雞蛋液裡

Lastly, one more round of bread crumbs 最后,再一次沾上麵包糠

Well prepared, freeze it overnight or minimum 6hours. 準備好了,冷藏最少6小時以上或隔夜


Put into hot oil carefully and fry for about 2minutes 小心放進熱油裡炸,大概2分鐘


Voila❣ 享用吧 ^_^

這是今天弄給老公的早餐。
因為今天是公共假期,所以就即興弄個Big Breakfast 給愛人囉。。。

有面包,scramble egg, 香香培根,香腸,還有蘋果,但沒有baked beans. 

Scramble Egg 是我第一次弄,很成功很好吃,只是剛才因為怕冷了不好吃,所以沒有拍到一張close up 一點的照片,不能看到這scramble egg 有多美。這scramble egg 可是用了3粒雞蛋弄的,老公說很好吃 ^______^

面包布丁 Bread Pudding

看到麵包今天到期了,丟掉很浪費,靈機一動,就弄了這面包布丁,作為家人的下午茶小吃。Looking at the unfinished loaf of bread, which expiry date is today, thinking what should i do instead of giving it to mr.dustbin. So here it is, an afternoon tea time snack for my family ^___^

我愛麵包布丁,在酒店自助餐吃的麵包布丁通常都是濕濕的軟軟的,很喜歡。在网上找到的食譜圖片卻看起來都是干的。不要緊囉,就先試試這食譜,自己也稍改一點成份,看看弄出來的是不是我要的。I love bread pudding very much, what i had @ hotel buffet are normally very moist/wet and soft, yet from all recipes i found online, the pictures show the bread pudding looks dry. I still have to try right, since i love it so much. I picked one of the easiest one, change abit the ingredients, and lets see whats the outcome loh (,")

結果哩?超香,超好吃,它的口感剛好就是我要的軟,很高興啊,哈哈。。寶寶也喜歡。。,The pudding: super nice, super super love the texture which is the right soft texture i wanted always, and im so happy with this tea time snack, hahaha, just love it... and my bb charlize loves it too...

✌✌✌✌✌✌✌✌✌✌✌✌✌✌✌

Ingredients:
~ 5-6 slices of bread 面包
~ 4 beaten eggs 打散的雞蛋
~ 2tbsp melted butter 2湯匙溶化了的牛油
~ 2cups fresh milk 鮮奶
~ 1/2 cup sugar 糖
~ 1tsp ground cinnamon 1茶匙肉桂粉
~ 1tsp vanilla essence 1茶匙香草精
~ some strawberry chocolate chip 一些草莓巧克力粒 (can replace with raisin, 可以用葡萄乾取代)

Method:
1) preheat oven at 160° 預熱烘爐
2) tear breads into small pieces into 8" square tin 把麵包撕小塊擺放在8" 正方形烤盤裡
3) drizzle with melted butter 淋上溶化了的牛油
4) sprinkle some chocolate chip 灑上巧克力粒
5) in a mixing bowl, combine well eggs, milk, sugar, cinnamon and vanilla essence. 把雞蛋,鮮奶,糖,肉桂粉和香草精攪拌均勻
6) pour the mixture over the bread, let the bread soak in it. 倒入面包烤盤,掩蓋面包
7) use a fork to slightly press the bread 用叉輕輕的壓下麵包
8) bake for 45minutes 烘45分鐘 (bake longer if you prefer crunchy texture 如果喜歡脆口感可以烘久點)

Bread in square tin    面包擺放在正方形烤盤裡

Drizzle melted butter 淋上溶化了的牛油


Sprinkle chocolate chip 灑上巧克力粒


The mixture of milk, egg, sugar, cinnamon and vanilla essence  雞蛋+鮮奶+糖+肉桂粉+香草精


Pour over the bread 倒在麵包上面


Use a fork to slightly press the bread               用叉壓下麵包


In the oven 在烘爐裡


Risen up 升高了


Higher, and the smell... mmm... 更高更香了♥


Tadaa.... 登場囉。。。

I thought is easy, but not, aih.... guess i need to practise few more times for agar-agar.

See my kitty's nose and ribbon, so messy, the texture also not so firm, maybe i should reduce water for nextime, hmm...

2 Ingredients Strawberry-Icecream Bread 2 材料草莓雪糕麵包

Yes, only 2 ingredients and you can have a loaf of heavenly nice bread infront of you, which you can cut off all the hassle:
ⓧwait for the mixture to proof
ⓧknead knead knead (if you do not have a bread maker)
ⓧwait for the final proofing

是的,只需2种材料,妳就可以弄出一個非常難以置信好吃的面包,跟本不用去煩:
ⓧ等面團發
ⓧ揉到手軟 (如果沒有麵包机)
ⓧ再等它發

Actually this is the second time i made this, the first time i tried this recipe was before i start blogging. And im very happy, as for this time, my icecream bread look+taste sooo much nicer than the first time. 其實這是我第二次弄這,第一次是在我還未開始寫部落格之前。高興的是,這次弄的,比起第一次弄的,好看+好吃很多囉 ^__^

The taste? HEAVEN❣❣❣❣ 口感?一流 ❣❣

Ingredients:
❀ 2 cup strawberry icecream 草莓雪糕
❀ 1.5 cup self raising flour 自發粉
❀ some strawberry chocolate chip 草莓巧克力粒

Method:
1) preheat oven at 160° 預熱烘爐
2) mix the melted icecream with flour 把溶化了的雪糕參入粉
3) mix in chocolate chip 加入巧克力粒
4) bake for 35minutes 烘35 分鐘

Yup, i simply lined the loaf tin. Ugly yeh... 亂亂鋪的烘培紙,夠醜


The melted icecream (",) 溶化了的雪糕


Flour + icecream 粉+雪糕


Added in the chocolate chip 加入巧克力粒



In the baking 烘啦


Tadaaa... 登場囉。。。


HEAVEN❣ 



Look at the skin, so smooth right 看看那滑滑的麵包皮

Guess this is the easiest bread recipe, definitely will try with more icecream flavors with different filling 這想必是最簡易的麵包食譜了,我會再試用其他口味的雪糕。。。

Note: the bread taste as nice next day, texture not dry at all (kept in air-tight container)
注:面包在隔天仍然很好吃,一點都不會乾 (收在密封容器裡)
